I met the wonderfully talented Nicolas Lodge at the Institute of Culinary Education in New York, he was doing a demo for Albert Uster Imports. The featured product was Massa Americana fondant, he demonstrated the use of this premium fondant. Nicholas also demonstrated the use of stencils, textured mats, tips on handling the different types of fondant and how he decorated a cake that was on the cover of American Cake Decorating magazine. I am looking forward to taking classes from him next year.
