The Adventures of John & Kate Food Cyclists April 2011

A special treat for John & Kate and the beginning of a wonderful bicycling adventure with stops in New Jersey. Dark velvet cupcakes made with stout from a micro brewery.

"Over the year in 2010 Kate and I have ridden over 1000 miles on our touring bikes visiting farms around the North East United States. This is in addition to bicycle commuting and racing. Starting in April of 2011 I'm going to head out on my bicycle from New York City and head South through NY, NJ, PA, MD, VA, and DE. I am calling this my "micro-tour" as it focuses on micro breweries and craft brewers."

Perfect Pumpkin Cake for a crowd.
Pumpkin Cake
A
2 sticks butter
1 1/2 cups sugar
1/2 cup brown sugar
1 teaspoon vanilla extract
2 cups pumpkin puree
4 eggs
B
Flour mixture
3 cups flour
2 teaspoons baking powder
2 teaspoons cinnamon
1 teaspoon freshly ground nutmeg
1/2 teaspoon baking soda
1/4 teaspoon salt
C
Toppings
1 cup mini chocolate chips
1 cup bittersweet chocolate chips
1/2 cup toffee bits
Preheat oven 325F, lightly spray a two 9 inch pans loaf pans. In a large bowl cream butter, sugars and vanilla. Add pumpkin puree and eggs one at a time. Incorporate flour mixture B. Pour into prepared pans and add toppings C bake 70 to 80 minutes. Cool, Share & Enjoy.
